Left-Over Dilemma

What to do with left-overs; an age-old question with many, many answers, one of which I will share with you today. One of my mom's favorites was Chicken A La King. When ever Gram made chicken soup, mom made this out of the boiled chicken. It's easy comfort food that still puts smiles on all our faces.

Chicken A La King

1 can cream of mushroom soup
1 can cream of chicken soup
1 bag frozen peas
1 jar diced pimentos
2-3 cups cooked cubed chicken

  1. Pour both cans of soup into large frying pan and cook on medium heat for 5 min.(Do not add water)
  2. Add peas and stir, cook for 10 min.
  3. Add chicken and pimentos, stir, cover and cook for 15 min., stirring occasionally.
That's all there is to it. Mom served it over white rice. I like it spooned into Pepperidge Farm puffed pastry shells; they make a nice presentation. Enjoy!!
