What to do with left-overs; an age-old question with many, many answers, one of which I will share with you today. One of my mom's favorites was Chicken A La King. When ever Gram made chicken soup, mom made this out of the boiled chicken. It's easy comfort food that still puts smiles on all our faces.
Chicken A La King
1 can cream of mushroom soup
1 can cream of chicken soup
1 bag frozen peas
1 jar diced pimentos
2-3 cups cooked cubed chicken
- Pour both cans of soup into large frying pan and cook on medium heat for 5 min.(Do not add water)
- Add peas and stir, cook for 10 min.
- Add chicken and pimentos, stir, cover and cook for 15 min., stirring occasionally.
That's all there is to it. Mom served it over white rice. I like it spooned into Pepperidge Farm puffed pastry shells; they make a nice presentation. Enjoy!!
